❄️ Should you freeze your coffee?
The topic of freezing coffee beans has been a source of debate in the coffee industry. However, many people and even some cafes are now embracing this method of storage. The reason is simple: coffee is best consumed within 3-14 days of roasting to avoid a stale and bitter taste. But in reality, we don't always have the opportunity to drink our coffee within this time frame. Whether it's due to receiving a large amount as a gift or purchasing beans on a trip, longer-term storage is often necessary.
Freezing coffee beans is an effective way to maintain freshness as it protects them from heat, air, and moisture. To get the best results, use an airtight container such as a vacuum-sealed bag or a plastic zip-lock bag. To allow for the removal of excess air, divide the beans into small batches before freezing. According to studies, a day at room temperature is equivalent to over 200 days in the freezer, so you can store your beans for extended periods.
Another added benefit of freezing coffee is that it results in a more uniform grind size and finer grind, which leads to increased extraction and a sweeter, less bitter or acidic taste.
So don't hesitate to freeze your coffee beans. Just be sure to follow proper storage methods for the best results.

Discovering a hidden gem in the bustling city of Bangkok is always a treat, and that's exactly what I experienced last year at Back of House Coffee Shop. Despite being located just 100 meters from my hotel, I had never heard of this new café that had only opened its doors in March 2022.
As a coffee lover, I was intrigued by the small but inviting atmosphere of Back of House. Equipped with just a single group head machine and a few passionate baristas, the experience was both unique and special. The level of attention and passion towards coffee is what sets this café apart from others. The interior design was beautiful, and the baristas were dedicated to brewing the perfect cup for each customer.
One thing that stood out to me on the menu was the diverse selection of coffee beans, including a few from Thailand. Thai coffee beans are not widely known around the world, making this a great opportunity to try something new and expand your coffee palate. For those looking for something truly unique, Back of House also offers a variety of iced coffee drinks with creative twists, such as their signature Black Apple, Mandarin Brown, and Espresso Yuzu Soda.

Simple Clever Dripper:
What you need:
A Clever dripper
A size 4 cone filter
20g medium ground coffee
Steps
Insert the provided filter or size 4 cone filter into the Clever Dripper. (Pro tip: fold in the edges of the filter to fit more neatly in the Dripper)
Pour 300 mL of just boiling water (between 195°-205°F, or 91°-96°C) into the Clever Dripper.
Add your 20g of medium ground coffee to the water. The coffee to water ratio should be around 1:15-1:20.
Let the water and coffee steep together in the Dripper for 2-3 minutes. Give the grounds a good stir 30 seconds before you release the coffee to make sure all the coffee grounds are fully incorporate
Place the Dripper on your vessel of choice mug (make sure the mug is big enough to capture all the coffee) and let the delicious coffee flow.
